Burnishing is the process of "polishing" and sealing leather edges for a nice look and increased durability. [1]
According to this instructable the key is to sand the edge flat, and then repeatedly apply gum tragacanth and rub the edge with the burnisher.
To prevent "mushrooming" the edge, you should always use a edge beveler first. [2]
You'll also find many videos online where people make drill press or rotary tool mounted burnishers for faster progress - that may be worth trying out if you have a larger leatherworking project in mind!
