Similar to sanding, grinding removes material by geometrically undefined cutting edges.
As a rule of thumb, grinding refers to hard wheels, discs etc. while sanding tools use paper- or textile-backed crystals. Grinding is also more associated with metalworking than woodworking.
In German, we just the umbrella term "Schleifen" for all of this ;-)
